Come and taste our New Discoveries

Domaine Billard, Cote de Beaune.

Jerome Billard took over this 20 hectare Cote de Beaune domaine from his father in 2002. He is an important grower in the Hautes Cotes de Beaune, holding some 12 hectares of vineyards.  While not certified organic he refuses to use weedkiller or synthetic chemical sprays and even avoids the use of a tractor which he believes harms the vines by compacting the soil. He even consults a lunar calendar from time to time.

The Pinot Noir grapes that go into the Hautes Cotes de Beaune are fermented for two weeks in open-topped vats where the grapes are turned by foot. This gives the wine great colour and extraction, while ensuring gentle tannins. The wine then ages in barrel for eight months. This creates balanced Pinot Noir with real character. It has raspberry fruit, with hints of cherry.

The white is called La Justice because its vineyards are located on the site where, in the fifteenth century, the local lord of the manor dispensed with justice. and, if necessary, the hanging of any serious offenders from an oak tree. The wine is fermented and aged in barrel, where it undergoes batonnage once a week. This lends the wine a certain weight and richness, not unlike Meursault. There are notes of ripe apples and some underlying buttery hints.

The wines will be on tasting over the weekend and we are offering the opportunity to pre-order these at a preferential rate. The wines will arrive from France in 3-4 weeks, depending on whether the Gauloise runs out.
