Gundog Estate Wild Semillon 2015
Gundog Estate was established in 2006 by the Burton family. The brand follows a simple but effective philosophy of producing small quantities of super premium, regionally distinct wine. With fruit sourced from contrasting terroirs in the Hunter Valley and Canberra District, the primary focus of production for Gundog Estate is Semillon and Shiraz. Through a measured winemaking approach that reflects a thoughtful combination of innovation and respect for tradition, Gundog Estate has become one of Australia’s leading new boutique wine producers.
With the Wild Semillon, we push the boundaries of conventional winemaking by fermenting a portion of the wine on skins (like a red wine) using natural or “indigenous” yeast. The aim is to create a very textural and complex style of Semillon that showcases another side of this great wine grape. The 2015 Wild Semillon is very aromatic, offering lemongrass, peach and some herbal tea notes. The palate is bright and fleshy with some residual sweetness there to offset phenolics (tannin) and acidity.
