Our Opinion Wrattonbully is right next door to Coonawarra, and is a lesser known, yet up and coming region.
Tasting Notes Deep ruby red, with aromas of dark berryfruits and plums blended with sweet vanilli notes of oak. On the palate the wine shows flavours of juicy berry fruits with a long and elegant finish and soft ripe tannins.

Method of Production The grapes are de-stemmed and crushed. A 2% inoculum of cultured wine yeasts is added after heating the juice above 20°C. The grapes are fermented in static and rotary fermentors. The fermentation is allowed to become hot (> 27°C) earlier then conducted at cooler temperatures to completion. The Cabernet Sauvignon grapes may be harvested from a vineyard in different lots 10 days to 3 weeks apart, in order to capture a diversity of flavours. 'The wine spend on average 6 to 10 days on skins with some parcels being given extended maceration.
