Method of Production Vineyard: Low yielding vines grown on limestone-clay escarpments, average age 50 years old. Harvested by hand. Lutte raisonnee. Organic. Yields: 40hl/ha. The crop arrives in whole clusters in the cellar and goes directly to concrete tanks.. Winery: 100% Cinsault destemmed, whole bunches, temperature control with partial carbonic maceration.
