Method of Production The grapes for this VSOP came from the superb Champagne areas at the middle of the Cognac region. The wine was distilled twice, distillation on its lees increasing its fruitiness. Remy pot stills are smaller than usual, reducing impurities and producing weightier spirits. The young spirit was aged for 7 years in Limousin oak barrels that are smaller than most houses use. Small barrels increase the surface to volume ratio, giving a greater ageing effect.
