Method of Production While many rums are created from molasses, Guatemalan Zacapa is made from the first press concentrated sugar cane juice or virgin sugar cane honey. After distillation, the spirit is aged in warehouses 2,300 metres above sea level. The mountain air ensures a slow maturation, and the development of the deep aroma, colour and rich flavour characteristic of Zacapa. Based on the Spanish sherry system, the Zacapa Sistema Solera ageing process permits the careful blending of rums of varying ages and characteristics. Zacapa 23 blends The rums which make up the Zapace blend are 6 to 23 years old. After blending Zacapa is aged in old Bouron and sherry casks.
