Method of Production 'Informed art' is how Nicholson describes his approach to whisky manufacture and that means a thoroughly hands-on, artisanal operation. Fermentation times are long, ensuring that every last morsel of character is extracted from the mash, and the distillery's short, stubby stills maximise this broad flavour spectrum to conjure up one of the fruitiest, richest spirits in the business. The whisky is matured predominantly in ex-American oak casks.
