Method of Production The grapes were picked, destemmed, crushed and pressed, the light pressings being separated from the final pressings. Having been cold-settled for 48 hours, fermentation took place, 45% in stainless steel vats and the rest in new, mainly French, oak barrels. 20% of the total blend underwent malo-lactic fermentation, the portion in oak had regular lees stirring for 6.5 months. The wine then was cold-stabilised, earth-filtered and fined then blended and bottled.
