Bordeaux

Bordeaux is the largest fine wine region in the world, with average vinatges producing more than 700 million bottles,  These range from table wines to some of the most prestigious and expensive wines known to man.  89% of the wine produced is red, with the rest made up of sweet and rich whites, such as Ch d' Yquem, from Sauternes,  rosé, dry whites and sparkling whites - Cremant de Bordeaux.  Bordeaux wine is made by 8,500 different chateaux, and there are 60 appellations.

The main grapes used in the production of red Bordeaux are Cabernet Sauvignon and Merlot, usually blended together with Cabernet Franc, Petit Verdot and also Malbec being used.  White wines are made from Sauvignon and Semillion, usually blended together.

There are a huge variety of wines in Bordeaux, and so the choice of dishes to serve with them is also extensive.  As a rule, however, the reds pair particulary well with red meat dishes, the dry whites with fish and sea food, and the sweet wines from Sautenes  are a must with Foie Gras, and of course desserts.
