Stainless steel tanks, once rare, are now commonplace, and most Bodegas now practise temperature controlled fermentation - thereby preserving the primary fruit flavours of the grapes. Today, Spanish wines, both young and aged reds, fresh whites, characterful rosés, elegant Cavas, and the sweet and fortified wines from the south, are gathering an enthusiastic international following.
