Bone dry and well structured, with really fine mousse and full on the mouth with long, lingering finish.......understanding Vouvray and its ubiquitous grape, Chenin Blanc, goes a long way toward understanding white wine in general. It is age-worthy, yet lovely in its youth. It can be made dry, semi-dry, sweet, and sparkling. It is the most transparent of grapes, relying heavily on the ground upon which its grown, in this case the local tuffeau, a geologically ancient compressed stone. The vintage truly tells the winemaker what to do.Some may also decry Vouvray thinking of it as just a sweet wine, which is unfair because Chenin Blanc is a grape with lots of acidity, any sweetness being balanced by freshness. Think of it like margarita ....tequila, lime, salt. Chenin gives the same thing.

Traditional method: 2nd fermentation in bottle with natural sugar and yeast. Ageing: minimum of 12 months on the lees; Works of soils and vineyards done according to the lunar calendar. Soil tillage made with horse. Harvest is done manually. No chemical inputs used.
Mathieu Cosme has taken over Beaumont estate in 2005. Before this, Mathieu had been working at Huet estate in Vouvray. The estate is in conversion towards organic farming. The soils are traditionally ploughed with a horse. No weed-killers are used. The vineyard is planted with Chenin only.
