Toro Albalá Don PX Gran Reserva 1986
This region is about an hour south of Córdoba or one north of Málaga and is the source of the Pedro Ximénez grape variety which makes the most luscious sweet wines. In this example, the grapes – picked in August - are left outside to shrivel up in the sun, thus truly concentrating the sugar levels and when eventually fermented, the resulting wine is lightly fortified, blended with a little old amontillado and then left to age in individual old barrels for a minimum of 25 years. The final offering is black in colour, bitter sweet and has elements of toffee, coffee, figs, treacle, and molasses. Should be served at room temperature with either a strong cheese, pâté, or simply drizzled over vanilla ice cream.
