Zevenwacht 7even Sauvignon Blanc 2016
This is a refreshing and fruit-driven wine. The palate has a combination of fig, guava, gooseberry and granadilla with a lovely density and a zesty lime citrus finish. It is quite different from the stripped-down Sauvignon Blanc so familiar from supermarket shelves, all green gooseberry and high acidity. Rather, it's a good all-round white with its own character.

The name 'Zevenwacht' is derived from Dutch meaning 'Seven Expectations' Situated on the Stellenbosch Wine Route and owned and managed by the Johnson family. Two prime farming locations supply the Zevenwacht winery. The home vineyards on Zevenwacht's 450 hectare maritime property, and the farm Zevenrivieren at the crest of the Helshoogte Pass. Cellarmaster Jacques Viljoen combines tradition with modern science and the principals of environmental care with passion and creativity to produce wines that are pure, natural and made to be enjoyed. The slopes of Zevenwacht not only produce wines, but also mark the site of one of the Cape's most remarkable enterprises - The Tin Mines which operated here in the early 1900's. The shafts and machinery from that venture remain on Zevenwacht bearing eloquent testimony to this impressive undertaking.
100% was barrel fermented and barrel aged for 4 months on the lees. Regular lees stirring added to the complexity and rich mouth feel of the wine. Thereafter we selected and blended the 15 best barrels. 20% new untoasted barrels. 20% 2nd fill and 20% 3rd fill. 40% 4th fill – 500L barrel. This resulted in a full-bodied wine with a yellow fruit intensity.
