Zevenwacht Barrel Fermented Chenin Blanc 2014
A clear and bright wine with hints of lime and gold. The palate is rich and refreshing and contains elements of honey, nuts, ripe pineapple, yellow melon and hints of apricot and yellow peach. The wine is classically dry, yet luxuriously silky with superb viscosity and length. Reminds me of a fruit salad made with ripe yellow fruit on muesli and nuts, drizzled with yoghurt and honey. Delectable with fish and shellfish, poultry and dishes with cream sauces and mild camembert cheese topped with toasted nuts and wild honey. A versatile wine so make your own best pairing.

The name 'Zevenwacht' is derived from Dutch meaning 'Seven Expectations' Situated on the Stellenbosch Wine Route and owned and managed by the Johnson family. Two prime farming locations supply the Zevenwacht winery. The home vineyards on Zevenwacht's 450 hectare maritime property, and the farm Zevenrivieren at the crest of the Helshoogte Pass. Cellarmaster Jacques Viljoen combines tradition with modern science and the principals of environmental care with passion and creativity to produce wines that are pure, natural and made to be enjoyed. The slopes of Zevenwacht not only produce wines, but also mark the site of one of the Cape's most remarkable enterprises - The Tin Mines which operated here in the early 1900's. The shafts and machinery from that venture remain on Zevenwacht bearing eloquent testimony to this impressive undertaking.
100% was barrel fermented and barrel aged for 4 months on the lees. Regular lees stirring added to the complexity and rich mouth feel of the wine. Thereafter we selected and blended the 15 best barrels. 20% new untoasted barrels. 20% 2nd fill and 20% 3rd fill. 40% 4th fill – 500L barrel. This resulted in a full-bodied wine with a yellow fruit intensity.
