Under the experienced eye of Florence Guy, the Chateau Coujan estate is based at Murviel les Bezieres in the Languedoc. The vineyard is organic and the usual range of languedocian varieties is grown: Rolle(Vermentino), Grenache Blanc, Rousanne and Petit Manseng for the whites, Syrah, Grenache and Mourvèdre for the reds, together with a relative novelty, Pinot Noir.

Much of the vineyard is situated on hillsides rich in sandstone gravel, over a bed of fossilised coral, which lead to well-drained soils. The yields are low, ranging from 40hl/ha down to 15hl/ha for the top red ‘Ile de Corail’. The yield for the dessert white ‘Derniere Cueillete’is even lower at15Hl/ha.

This special cuvee from Chatea Coujan is made in relatively small quantities (15 hectolitres per hectare) from 100% selected Mourvèdre grapes. These grapes are grown on the most favourable terrain (12 hectares)  where the vines grow on  hillsides (140 metres in altitude) with a soil rich in sandstone gravel overlying the underlying rock, which is a band of fossilised coral from which the wine takes its name.

The wine has a deep purpl e colour with a nose of ripe dark fruit e.g. damson and prune, owing to 35 days maceration. The palate is full and rounded with an immediate sensation of ripe dark fruits with hints of spiciness. The tannins are silky and the finish is complex and harmonious. This is the top cuvee from Chateau Coujan and would suit special dinners. Ideal for drinking now since the wine has had some years ageing in barrel then in bottle, it could improve further over the next few years.
