Pale lemon in the glass, with few signs yet of straw coloured notes. The nose is fresh and subtle - ripe green apple with hints of citrus. There are also richer, rounder aromas deriving from the oak ageing together with mineral and buttery notes. The palate is appealing on first impression, with a pleasing fruitiness followed up by mineral notes and hints of buttery notes. The finish is smooth and complex with a lingering aftertaste.  Thoroughly enjoyable now, the wine should develop further and gain in complexity over the next 5 to 6 years.

The Amboise family philosophy is "expressing the typicity of the terroir.". Yields are low and grapes are concentrated because of traditional farming techniques, extensive pruning and cover crops between vines. The wine is made from 100% Chardonnay grapes grown on the family vineyards near the village of St Romain. Winemaking is low intervention. 

 Saint Romain is a village in the southern part of the Cote de  Beaune which specialises in the production of  white wines because the soil is very limestone rich. There are also red wines produced from Pinot Noir grown in smaller quantities. Nearby the famous villages of Meursault, Puligny Montrachet and Chassagne Montrachet produce the most famous white wines in the world from the Chardonnay grape which reaches its summit in the Grand Cru vineyards ’le Montrachet’ and ‘Corton Charlemagne.’ 

The Amboise family own 20 hectares of vineyards in the Cote de Nuits and the Cote de Beaune. The family philosophy is to produce quite rich, expressive wines which reflect their terroir as well as the winemaking skill of the family. The wines are aged 12-18 months in oak barrels depending on their colour and natural weight.
