The vineyards which produce Pouilly-Fuisse lie on south-facng slopes surrounding the famous Rock of Solutre where the Chardonnay grapes thrives on the well-drained soils which are clay and limestone dominated. The Auvigue family have owned vineyards here for generations and cultivate the vines in a traditional non-interventionist way with minimal use of chemicals in the vineyards and in the winery. Harvesting is carried out late in th summer at perfect maturity and the grapes are hand-harvested.
