Right down in the south of the Champagne region lie the Aube vineyards close to the towns of Bar-sur-Aube & Bar-sur-Seine. Champagne René Jolly is a family owned business with a history dating back to 1737 and only produces champagne from its own vineyards. Pierre-Eric Jolly, who took over from his father in 2000, follows the principles of lutte raisonnée,– he never applies chemical fertilisers or insecticides, preferring only to use natural, organic and biodynamic alternatives and he has brought many new innovations to the winery and indeed the Champagne region(If you ever meet Pierre-Eric, ask him about his invention: the Y Muselet Tree legs cage)! Every wine in the range is a blend of at least 3 different years and once bottled spends a minimum of 3 years in the cellars, before being disgorged by hand without freezing. Champagne René Jolly is one of the only producers in the region to use this method of disgorgement.
